Many (most?) people who create mkgmap maps will tinker with the style 
files to some extent.

If the question is "how do I get feature XYZ added to the default style 
file" then a chat with the people on the mkgmap list might make sense:

People submit occasional default style patches, and they get 
incorporated (usually after a bit of discussion, but without any of the 
aggravation that sometimes inhabits the OSM lists).
