I think it may depend on whether the roads are part of the pedestrian area.
If they are pedestrian-only roads, then the width of the road is part of the
area, so it makes sense for the area to extend to the centre of the road (or
perhaps out to the width of the road on the other side, but that seems too much).

However, also bear in mind routability.  The pedestrian area needs to be
connected somehow to the roads so that walking routes can be planned going
across it.  If you decide to leave a gap between the area and the surrounding
road, some extra 'legs' will be needed to join the two together.  For this reason
I normally map pedestrian areas contiguous to the ways that bound them, provided
you can walk between the area and the way at any point along its length.
