basically there are no limits, you can map all categories of
information, as long as the features:
- are more or less permanent
- are suitable to be represented with vectors
- do relate to some geographical property or object with geographical qualities

There is a list of the "main" features here in the wiki:
http://wiki.openstreetmap.org/wiki/Map_Features (I guess you know this
page?) and by searching the wiki for terms you will find other tags as
well, either as feature definitions, or as proposals. To get an idea
how established they are, you can have a look at taginfo to see the
actual use: http://taginfo.openstreetmap.de/  (this is also an
interesting to find tags that aren't yet documented).

If you have something to map and you can't find a suitable tag the
best thing IMHO is to ask on the mailing list (tagging) [1] if there
is already a mapping schema for it, or to discuss with other mappers
what would be the best new tagging schema for this feature.

Please note that not all information present in the database will also
find its way on every map rendering created from that data. Some
information will be more relevant for routers then for renderings
(e.g. maxspeed, surface, access-restrictions), or might be relevant
for geocoding (addresses). Keep in mind that what you see on the
mapnik rendering on our website is not the only representation of the
data (see also http://wiki.openstreetmap.org/wiki/Tagging_for_the_renderer
)
