if you split the way with the sign at the projected sign position there will be only one way (because signs are rarely in the center of a crossing).
there is even documentation how to do it (case 8, just discovered this myself, thought about restriction=only_u-turn or not_forward but it's no_entry): http://wiki.openstreetmap.org/wiki/Relation:restriction
