Indeed, I have also taught Josm to newbies and someone remained ;-)
You don’t have to use most of the functions and features, you just need a few keyboard shortcuts like a, s, p, c, b and a mouse, x and q if you are mapping buildings and alt+a, j and the modifiers ctrl, alt etc., ctrl+z,  explain the interface, and they are good to go

The basics take at least the same  time to explain, regardless of the editor, like what is OpenStreetMap, nodes ways and relations, how do tags work, which tags are established and where can you find them, common relation types…

This is assuming someone wants to become a versatile mapper, if all they want to be is building drawing monkeys, it can be done in 100 seconds, just show b, x and ctrl+z and the upload button ;)
