The "oldest unprocessed" is just the age of the oldest uploaded yet unprocessed tileset. Usually a .txt and a .zip file exists with the same name and the server looks for .txt files (which contain the meta data). However in some weird cases (aborted uploads?) there is only a .zip file lying around and never looked at.
That's why and when the oldest unprocessed graph gets out of control, it's nothing serious though. The server should just be a little smarter and clean up those files itself, but it currently doesn't. I might improve this if I find some time.
