And while it isn't part of this project, Mapnik does nothing special
with the police station around here (an area, tagged amenity=police,
name=Blah), but does render the name.

For areas I'd have thought tag them the same as a building, with
name overlaid. Although having said that, the area I've tagged
includes the building, the public use car park at the front,
surrounded by grass, and the private secure police car park at the
rear of the building. So maybe rendering as a building wouldn't be
suitable, and perhaps similar to some sort of landuse? If I had just
tagged the building, rather than their entire plot, I could have
added building=yes, I suppose. 

For nodes it needs someone to suggest an image (I don't know whether
there is one in Mapnik as I don't know of any nodes tagged
amenity=police)
