Hi Malcom,

The data are stored in a server own by OSM France.
If you limit the permissions to editors only, then only the people 
listed as editors we be able to edit the map (and the same if you limit 
the access to the map). But this is without any kind of guarantee.
If your data are highly sensitive, you certainly better use a different 
option (one can be to host your own instance of uMap).
