[GraphHopper] Changing the weighting in the config file

If you have enabled CH you specify in the config before you import:
prepare.chWeighting=fastest|shortest

If you disable CH you do this while querying

If you have a custom weighting you normally do that in the
GraphHopper.weighting method which can be controlled by the config or
even by custom URL parameters in the latest master.
