There are not set-in-stone standard way for mapping in OSM.  We try to
use any technology possible.

1. Some people use GPS and GPS enabled phones.  Accuracy depends on
the device and the way you use it.  Peter and Boris already mentioned
several techniques.  Another useful technique I use is photomapping.

2.  Others use imagery for tracing.  In many cases, hires imagery is
better than using GPS, but take note that imagery (particularly Bing)
may have an offset.  You can use multiple GPS traces to verify imagery
offset.  A tool in P2 and JOSM can shift the imagery
(http://wiki.openstreetmap.org/wiki/Yahoo!_Aerial_Imagery/Accuracy#Mapping_with_an_offset).

In short, you can use a variety of technique to contribute to OSM.
Use whatever tools available, I have a friend who map using sketch
