It depends which editor you are using.

With the online editor if you click the "A" icon tool and then click the 
segment it first selects the way, click the segment a second time and it 
selects the segment, then click the advanced tag in the dialog box and you 
can delete any tag you like

If you are using JOSM then hold down ALT while you select the segment (this 
causes you to select the segment rather than the way) , and you can then 
delete the tag in the properties dialog.
