You're right - you use the GPS traces as a guide. I think the node placement
can be fairly rough. Often the GPS accuracy is only good to 7 - 10m, which
is about the width of a residential street, so some guesswork will be
involved.
Do I just place the nodes roughly? Is there any special technique?

Cycling along the road in both directions will let you average the traces
and should get you closer to the centre - but I think your time would be
better spent cycling along each road once, and getting more streets onto the
map.
How many nodes should I create per road?

I usually create just enough nodes to follow the shape of the road. You'll
need a node at every junction too. So, if it was a straight road with no
junctions of it, you could get away with two nodes and one segment.
