Remember, there is also a wiki which describes most of the JOSM functions at http://josm.eigenheimstrasse.de/wiki/Help, and the relevant pages from this wiki can be accessed by pressing F1 when in JOSM.

    I don't quite understand what you are trying to acheive. Although
    splitting ways is sometimes necessary, I don't see why you'd ever need
    to recombine them.

    A much more frequent task is to insert extra nodes into an existig 
    way. This can be done in JOSM using one of the modes of the node tool.
