Any coordinates (permalink) where we could see what you mean? (Well I do
understand what you're saying, but I'd like to see).
As a wild guess: A JOSM user (accidentally?) moved the entire way you
were editing and uploaded his version while you were working on yours.
The way itself was not affected from the josm upload because it was not
manipulated, only the nodes of it got displaced. this displacement was
not shown to you, but you edited the *new* nodes based on the (meanwhile
outdated) placement of the old ones, thus creating said zig-zag effect.
