There are a lot of times when imaginary features are depicted, or
natural features are falsely coloured to portray specific information
to the end user.
Here's a map that has no imaginary features, and just about no real
features either.

False colouring of terrain helps the viewer conceptualize the lay of the land.

False colouring of imaginary features might help a traveller determine
where they are going to be visiting.

Even accentuating natural features can help show items that may not be
shown on other maps.

This really is more of a reason why one should not tag for the
renderer... it all depends on what the person rendering the map wants
to portray to their audience. You might not really care about
hydrography, and choose to leave that off your map where roads are of
the most importance. However, for a kayaking map, hydrography is a
pretty important feature, with roads being quite a bit further down
the list.
We're never going to get a perfect rendered map... there are too many
concepts of what perfect is!
