The Wiki contains 2 pages:

http://wiki.openstreetmap.org/index.php/Making_GPX_Tracks#Series_60_Software_.28for_Bluetooth_GPS.27s.29
http://wiki.openstreetmap.org/index.php/Making_Tracks_with_Homebrew-ware#Mobile_Phones_.2F_Symbian

Nokia N71 is a SymbianOS phone, Series60 version 3.1. N71 is only a
couple of weeks old so it's not mentioned yet in the Wiki, but all
well-written software for S60 3.0 and S60 3.1 should run without problems.

Personally I have used Sportstracker (not on N71, but on compatible
phones). No map interface during capturing, but the GPX files it
produced have been accepted by OSM without any transformation
required. If you have problems, let me know and I can try on N71, too.

Technically speaking that's not correct. The device can run so-called
Java Midlets. These are somewhat limited "applications" for mobile
phones or similar portable devices.

MGMaps (which has already been mentioned) is a midlet. I haven't used
it much recently, but from my earlier experiences I'd definitely
recommend it. Last time I looked they had 2 versions, one generic and
one N95. Not sure what the difference is. If it's an additional
feature the N95-version should be suitable for N71, too. If it's a
work-around for some problem, it depends whether the problem has been
solved for the newer phone...

If you don't have flatrate for your data traffic, be careful with the
data volume! And remember that even flatrates don't cover roaming
fees.

(and I think the story is basically the same one for all operators in
all countries)
