You can set
shop=value
to any value that fits the particular country. For Drogeriemarkt I'd
go with shop=Drogerie as there doesn't seem there is a fitting
translation .
If you do so, please add that tag to the wiki:
http://wiki.openstreetmap.org/index.php/Key:shop

Same goes for the other stuff you mentioned. I guess English
descriptions are preferable if there's one available, so for "Grand
magasin" I'd go with something mentioned here:
http://dict.leo.org/ende?lang=de&lp=ende&search=Warenhaus
There doesn't seem to be any particular one in use yet, so feel free.
Just make sure to add them to the wiki so other's can find them :)
