[OSM-newbies] Rendering countries

I've spent a few hours googling and digging through the OSM wiki and I'm
still stumped. So maybe one of you will know how to do this.
I want to get the country borders and major cities for the countries in
South America. I'm going to use other software to add some statistics and
then print it out (Probably Inkscape and OpenOffice). Preferably the
country data gets rendered to an SVG in a way that I can manually tweak
colors for countries so it's nice and easy to see.
Is there software for this already? It would be really nice if this sort of
use is easily packaged up and simple to use so people could use OSM in their
school reports and things like that. I found an earlier post asking a
similar question and the answer was to check out XAPI... that's a bit out of
my range unfortunately unless someone has a walkthrough for it.
