I'm not sure if the documentation is on the OSM site anywhere. But its a 
fairly standard MediaWiki setup, so you can look at the help for that.

But to answer those questions anyway:

The blue triangle means there's been several recent edits to that page. 
If you click on the triangle, it will expand them to show them all.

N means new page. ie that edit was the one that created that page.
Other letters: 'm' is a minor edit.
Also 'b' for a bot edit (though I don't know if there's any bots on the 
OSM wiki anyway).
