You need to draw the ways over the GPS tracks manually, just sending a
GPS track in doesn't create the streets. It is good to upload the GPS
track anyway.
If you have a village, this is a good size for JOSM - you can import
your track & draw the ways on top very easily this way.
You can also have a practice without sending anything to OSM for
practice, then do it 'for real' & upload the data.
It's nice to see it all come together. I suggest you do main streets
first, to get the shape of the place, then add minor roads, then details
later. If you intend adding addresses (see Karlsruhe Scheme) gather the
house numbers as you go as well as street names, it saves going back later!
