The OSM standard is to use the ISO 639-1 code (2 letters) for a 
language, or the ISO 639-2 code (3 letters) if an ISO 639-1 code doesn't 
exist.
You can get a list of these codes here:

or http://en.wikipedia.org/wiki/List_of_ISO_639-1_codes

Though not all of these codes will actually be used in OSM anywhere.

No, I don't think so. When you run osm2pgsql it only imports what is 
specified in the default.style file, all others keys are discarded.
