Actually I won't make that exact distinction. I would tag both as 
amenity=marketplace

You described it already, why not simply map it like that?
Create a polygon for the building tagged as:
amenity=marketplace
building=yes

...and another one for the area next to it just tagged as
amenity=marketplace

Tag both with the opening hours of the thing you called "marketplace" 
earlier and add the Saturday and Monday market as a note.
