[OSM-newbies] "Low detail" datagrab?

Hi There,
I'm looking to assemble a map of Western Europe (from the UK to around
Italy) , with some specific rendering. It's to be printed up for a school
wall.
I'm new to rendering, so not sure how it all works. As far as I know, the
only way I would be able to achieve this is to download the Europe extract
of planet.osm , then render it up from there.
Is there a simple way of just extracting certain tags? The idea would be,
mostly, to keep the amount of data down!
To start with I would just need the coastline, country borders and cities.
I've had a look through the Wiki's , but can't find any instructions on
this. If I just missed it, please feel free to post a link, with a RTFM
attached ;-)
