The filter pane has a checkbox for completely hiding any filtered 
features. You should see a "H" column in the filter pane.

Otherwise, you can work in wireframe mode. Press Ctrl+W to toggle it on 
and off.


(Aaaahhh, I do miss the good ol' days when JOSM didn't have the mappaint 
plugin built-in...)
