Once collected in WiFiFoFum, you can then export them(via .csv for example), and then open them up in a spreadsheet or something, and edit the fields to match OSM, and then import them to OSM.

If you don't have Cydia then OffMaps is a great app for using OSM maps while you're roaming. You prime it before you leave by selecting an area and it downloads the tiles from that area to whichever level you select. You can also log bugs while you're out and about which get added to the OpenStreetBugs site. It's not an editor and doesn't store traces but it's a very handy app and it's good to be able to say "this road name is spelt wrong" or things like that. The app's not free but it's been well worth the price for me.
