The Key:disused¹ wiki page describes a style of "disabling" a tag by
prefixing it with "disused:". This could be used in this case to produce
something like "disused:conveying=*".

I feel the same issue occurs for a lot more things than escalators /
moving walkways, though, so it's likely outside this proposal's scope.
