Sorry, for the late answer but I hade to take some holidays.

Thanks for the nice summary. One small point I like to mention: Why do
we not deprecate amenity=gambling and only use gambling, especially as
it might collide with another value of amenity.

gambling=* could be used with all tags to define the different kind of
"games" available at the place.
