The trade tag might cover some of all of those cases. It covers in
particular business-to-business places. It was originally used for
companies like builders' merchants who often also did retail sales.

You might extend the subtags (industrial maybe?). However, I agree that
the "shop" in shop=trade may not feel quite right for the places you
describe.
