The point is that a disused shop is no longer a shop:
A shop is a place you can go to to buy stuff or services. If the shop has closed, it's effectively not a shop any more and no longer of interest to most data users.
The field "from" of an email is about as reliable as the address written on the back of an envelope. That's why this message is OpenPGP signed.
