Is there some kind of vending "machine" value for hiking / camping/ fishing permits?

I would definitely be interested in where permits are sold at a campground or even at a wider view of a whole wilderness park - maybe that is implied in amenity=ranger_station ?

That seems like a good implication for a ranger station.

Something like that.

That said, IMO the ranger_station is a different type of amenity from the information office described in the above tags. Just a couple of simple additions to the wiki page would clarify those differences.

My first impression of a place tagged with tourism=information is that it is strictly for local information, not that it also a place to get some specific types of legal paperwork issued.
