Anne-Karoline,
I think it's important that we have a tag that can be used when the water
body is obviously in an old quarry (or a semi-active quarry?), but it is
not required to be used for every quarry, especially the very old ones from
centuries ago.
If it's not obvious whether the lake is artificial or (semi)natural, then
it's fine to just tag it as natural=water without a water=* classification.
