I agree there might be a gap for a specific tag in this field, although there might also be different kind of handicraft shops ;-) In part there will be overlap with stationery shops and shops where artists buy their material.
Can you explain what kind of things they sell and what services (if any) are offered?

For example this shop is tagged as stationery, but it really is an understatement, they have a huge selection of all kind of handicraft and model building materials (cardboard, foamboard, wood, metal, plastic, fabrics, ...), tools, frames, stationery, furniture like tables and lights, on 2 floors, have a look at their website to get an impression: https://www.openstreetmap.org/node/1502983701
