Our wiki is not extensive but quite well defined for all the variants so
far described:

craft=handycraft
(https://wiki.openstreetmap.org/wiki/Tag%3Acraft%3Dhandicraft) says

> A place where useful and decorative devices are made completely by
> hand or using only simple tools
No more information, might need extension to clarify. (maybe we don't
prefer to use it where it is also a place where these items can be bought)

shop=gift (https://wiki.openstreetmap.org/wiki/Tag:shop%3Dgift) says

> Selling gifts, and/or greeting cards. This also covers tourist gifts,
> otherwise known as souvenir shops.
To my opinion suitable for Antonio's initial request.  Could be approved
by maybe specifically adding something like "items like art and
handycraft or other crafted items that are specifically sold as being
used as gifts or tourist souvenirs are also included in this category",
also useful if António could be so nice to provide us with a picture in
the examples section?

shop=craft (https://wiki.openstreetmap.org/wiki/Tag:shop%3Dcraft) says

> An *arts and crafts* supply store is a place where customers can buy
> supplies for making art and crafts. Common items sold at these types
> of stores include paper, canvas, paint, pencils, crafting wood, and
> tools for crafting.
Seems clear and yes, as Martin said for the tools so not applicable for
antonio's case.

shop=model (https://wiki.openstreetmap.org/wiki/Tag:shop%3Dmodel) says

> A *model shop* specialises in the sale of scale models.
>
> The models can represent planes, trains, auto-mobiles at any scale.
> The materials for example can be plastic, metal, wood, etc or any
> combination of these. The models maybe static or be self propelled
> possibly with some form of control.

Very clear and complete wiki page, I think it addresses Martin's example.
