For what it's worth: en:Wikipedia says
" A barber's place of work is known as a "barbershop" or a "barber's"
" In modern times, the term "barber" is used both as a professional title
and to refer to hairdressers <https://en.wikipedia.org/wiki/Hairdresser>
who specialize in men's hair."
So the actual tagging shop <https://wiki.openstreetmap.org/wiki/Key:shop>=
hairdresser is correct for a barber's with the addition of
- female <https://wiki.openstreetmap.org/wiki/Key:female>=yes/no for
tagging a female-only.
- male <https://wiki.openstreetmap.org/wiki/Key:male>=yes/no for tagging
- unisex <https://wiki.openstreetmap.org/wiki/Key:unisex>=yes/no if
available to all. (yes default if no tag set)
No need for new tag n my view
