In US usage, that is definitely not a food court. I am thinking of a
hospital cafeteria that is exactly as you describe, maybe minus the
sushi). This is just a cafeteria with food stations. Part of the
eseence of food court is that the various places have their own
branding, their own registers, and appear to be separate businesses,
with a common seating area.
In a food court, I would expect the seating to be tagged as food_court,
and individual places to be tagged as fast_food.
With the uni/hospital cafeteria, I would expect tagging for a single
entity, which is probably fast_food.

In the US, "self service" for food court makes no sense.
It is true that you go to a counter and leave with a tray of food.
definitely no table waitstaff. and it would be really surprising,
pehraps not quite disqualifying, for them to bring something to you
after a while. But it's fast_food, not cafe, so that basically does
not happen.
