[Tagging] How to tag a mule track

How do you tag a mule track, Saumpfad, Maultierpfad, Mulattiera, chemin
muletier, pista de mulas
Around here (Northern Italy) this is a very characteristic feature. It is a
path, wide 1 ... 2 metres, with a characteristic surface: bare rock and/or
stone blocks.
Tagging so far has been variegated.
I am after tagging for the surface, not the historic use of a path, which
is often reflected in the name.
How are they tagged in areas of active use?
