Or would it be the entrance for goods to arrive? For some shops these 
are the same, for most they would be separate.

There is already the entrance=service that says 'employees or for 
delivering' which is unfortunate. There is already highway=service with 
service=*. And then 'delivering' does not cover goods going out.

Some butchers shops have a delivery that is separate from the customers 
entry.

I think entrance=service is 'underdoing it'. :) Sometimes on entrance 
may do a few things? OSM already provides for multiple values using 
semicolons.
