Hi Kim,
  I find that Garmins Mapsource does a pretty good job. I use the  
"Track Divide Tool" and "Track Join Tool" to remove side trips etc and  
then save the file as gpx. It will open gpx files as well but it isn't  
available for linux I'm afraid.
