Create a circular way that loops back on itself, but make sure all of the segments point in the same direction. The give it the tag 'area=yes', plus any tags allows for areas ('amenity=parking' in your case). This will create a yellow shaded parking lot. If you want a P symbol also, then just add a node with 'amenity=parking' in the middle of the lot also.
