JOSM, P2 and iD should all remove UUID tags automatically when modifying an
object.

I normally remove NHN/NRN attribution tags because they duplicate the source
tag. For source, I try to consider if the source tag will be helpful to the
next mapper. If all I did was a topology fix or something small I'll
probably leave it, but if I was out there, verified the name and refined the
position, I'll probably remove the source tag as it's no longer accurate. It
depends if I feel that the source tag still accurately represents the
source. Note that this is not a legal distinction about derivative works,
there are no legal issues which prevent the removal of any tag, it is purely
what is useful to have tagged.
