One option is shop=sports + sport=fitness, which will render immediately

Alternatively, if a distinct shop type is preferred instead of
gym_equipment I would use fitness_equipment to accord with the relevant
leisure tags (fitness_station, fitness_centre).
Despite being pretty standard us-en & gb-en gym causes a degree of
confusion in other languages.
On Debenhams, my personal preference is to leave them as an indicator that
the area concerned may be out-of-date in other ways. A while back I did
experiment with creating
osmosis tag-transforms to change tags for some shop chains which had closed
or re-branded, which could then be used for downstream data consumption
(which would be
useful if, say, running a service for non-mappers). Obviously the same can
be done in LUA, but I'm not aware of how this could be parameterised in a
separate file from the program.
Before Robert's ghosts I placed notes over Netto & BHS stores & people were
still diligently searching the ones which hadn't been caught and closing
them after 4 years or so
(often a newish mapper updating their local area).
In practice I think it's also worth considering the general degree of shop
updating which will be needed.
