I have wanted to use the Holux like this but have been put off by some
people who have said (on the net) that when you switch it on, you have
to worry about whether it's located the satellites, else it does not
start logging.

I want the exact functionality you suggest above: A GPS logger which
will capture data when it can and be unfussy when it can't. Does the
Holux 241 fit that bill?
