waterway=canal definitely seems more appropriate

Wouldn't those waterways be tagged as waterway=canal?
"Water races" seem by OSM definition to be canals:
https://wiki.openstreetmap.org/wiki/Tag:waterway%3Dcanal
The usage=irrigation tag seems appropriate.
Ditches seem to be defined as waterways designed to drain land.

historic=archaeological_site
site_type=fortification
historic:civilization=colonialism ?
