Hi Marc,
Trails are typically captured using Ways tagged highway=path or
highway=footway. To map a simple bridge, just split the Way object for the
trail at the beginning and end of the bridge and add bridge=yes and layer=1.
The Way object for the bridge does not connect to the feature underneath
(stream, road, etc). All map features have an implied layer=0 unless
otherwise specified. If you had a bridge on top of another bridge, you
would use layer=2 and layer=1 for the bridges respectively.

Note: for larger bridges, there is the man_made=bridge tag that can be used
in addition on an area in addition to the above tagging, but I think that's
overkill for simple bridges on trails
