I'd go with a Nokia Series 60 based phone. You can then load python on, 
and that gives you a choice of python or j2me applications to run on it.

I sometimes use GETrack (as previously mentioned). It exports straight to 
GPX, the author is really friendly and helpful, and it's cheap.

The rest of the time, I use my own nmea_info.py[1] (becoming increasingly 
badly named!). This shows you all sorts of info (satelites, OS 
co-ordinates etc), and logs the nmea data. You chuck that through 
gpsbabel, and out pops your gpx file.

(I'm half tempted to write something to offload the tracks over 
bluetooth in GPX format, if people think it'd be of use)
