It was slightly confusing for me.  You have to reboot the TomTom (not 
simply a matter of shutting down with the power button, e.g. removing 
the SD card will do it).  Then when it next boots it saves the gpx file 
in Tracer/Tracks.  If you are accessing using USB then maybe you won't 
trigger any event which causes a new track file to be created.  It 
should also be triggered by other events (basically starting a new 
travel, so some time from when you last traveled if there's been a gap).

I guess if you have tried those things, it would be something else.  I 
used version 6.3.

I'm a little disappointed just now as I think this would be a relatively 
easy way to get data if we could get the raw GPS coordinates.  From 
what's written on wiki.opentom.org that is feasible but it sounds to me 
like it might interfere with the operation of the navigation.  I also 
found that setting granularity to 1s causes voice commands to break up 
somewhat, presumably due to processor load on the device.  The default 
is 10s which I feel is far too infrequent for collecting decent traces.  
The traces at 1s looked really good - until you realise they're snap to 
road and thus useless :-(

For now I've ordered a Sirf III USB device to plug into my laptop.
