Welcome to OSM :-)
At present nothing other that the latitude and longitude from the GPX file
is used. However the gpx files are not thrown away and might one day be
re-imported to drag more information out of them. They are of course also
available to anyone to download if you choose to make them public so someone
else may have a use for the extra data.
Having said that, altitude accuracy just from satellite data (ie no
barometric or other information) is not a great deal of use anyway due to
the poor accuracy. There is also free height data available to place
contours on maps so elevation information is not really critical for OSM at
this point in time.
