The only clear 'update' is the import of the new planet dump which
typically occurs every Wednesday, normally a few hours after the dump
appears on planet.openstreetmap.org. 

The rendering (which you are probably more interested in) is a
continuous process and never really finishes. What happens is that when
tiles older than 2 days are viewed they go on to a list of dirty tiles.
These dirty tiles get rendered continuously and normally get rendered
within a few seconds or minutes of being added to the dirty queue.

Note that there is no direct connection between when tiles get rendered
and when the import of the planet dump occurs. This means that quite
often tiles get re-rendered with the same data. In other cases tiles
viewed after Wednesday may still contain stale data which might not get
re-rendered until after Friday.
