These should all come under "route" in Map Features, that was what "route"
was in there for in the first place. To apply it you would add the route key
and any necessary value to the relevant ways. Where only part of a way is in
use for the route then there are two choices. Either split the original way
and add the route tag to the relevant section or create a new way (just with
the route tag) from the relevant segments.

I've used this approach for National Cycle Network tagging and the like.

These trails are similar to bus routes. They are a designated route from
point to point but do not normally relate in any way to the physical or
administrative designations of the highways involved.
