Take a look at http://wiki.openstreetmap.org/index.php/Tagging and also
the appropriate tagging guide for your area.  I assume since you mention
interstates that you're in the US; in that case read
http://wiki.openstreetmap.org/index.php/United_States_roads_tagging
If you're not in the US and there's no specific guide for your area, you
may wish to create one.
http://wiki.openstreetmap.org/index.php/Map_Features (as suggested by
Andy) contains an overload of information on general tagging guidelines,
and is the source on which all area-specific guidelines should be based.
